Chablis Domaine Billaud-Simon 2005

I’ve tasted several 2005 Burgundy’s recently and am really impressed by the positive, bright focused fruit flavours. This is a superb Chablis from a very fine estate producer. It has a creamy and citrus zest aroma, immediate lemony fruit flavours with a rich steely and mineral character. It is very attractive now but will be a keeper if you can resist it! The vines are grown biodynamically.
