The Rymans are working towards organic status for their vineyards and the attention to detail is certainly paying off in the continually improving quality of the wines. This 2005 from Cabernet Sauvignon, Merlot and Malbec grapes, is much riper and juicier than the 04 I had last year. It still has the characteristics of a Bordeaux-type red with a touch of blackcurrant, blackberry and some cedar. It is a sophisticated, polished wine with nice fruit and smooth tannins, and good structure too so is an excellent wine for Sunday roast.
