Julien Schaal is a talented young wine-maker who believes in minerality. That's why his wines have a clean, focussed style with a very distinct character of the grape variety. This has lychees, spice and blossom, all text-book stuff. Although not bone dry it is beautifully balanced with a dry finish. Such a useful wine with spicy foods and smelly cheeses.
